At the end of March, Rosa Mexicano, a noted Mexican restaurant, opened its doors at the Walt Disney World Dolphin Hotel.
It is the first Orlando-based area location of the restaurant, which offers a fresh take on classic Mexican dishes. The restaurant honors Mexican heritage and features dramatic design elements such as bold, rich colors and vibrant murals.
The restaurant continues to deliver founding Chef Josefina Howard’s vision to introduce Mexican culinary traditions, regionally inspired dishes, and fresh and authentic Mexican food to diners.
Headquartered in New York, Rosa Mexicano operates restaurants across the East Coast, including New York City, New Jersey, Connecticut, Pennsylvania, Maryland, Virginia, and Massachusetts. Upcoming openings are planned for Las Vegas and Fort Lauderdale.
The signature guacamole and frozen pomegranate margarita are regarded as best-in-class. Another must-try is the Duck Carnitas and a tasting dish of three Enchiladas. Rosa Mexicano boasts over 100 varieties of tequila and agave-based spirits.
The restaurant is located in the Walt Disney World Dolphin Hotel, at the site of the former Fresh Mediterranean Market restaurant.

Yummy times 10! The food looks fantastic. And I love the decor, too. Let’s move to Florida, ok? [Oh, well, um, maybe not.] Anyway, sign me up for Rosa’s Mexicano. Did you take the photos?
